酒齢12年以上のモルト原酒を吟味し、これに相応しい複数タイプの12年以上の円熟グレーン原酒をブレンド。梅酒を貯蔵した樽で熟成させた「梅酒樽熟成モルト原酒」を用い、サントリーウイスキーの特長である甘く華やかな香味をより一層引き立てています。さらに30年を越える長期熟成モルトを加えることで、味わいに厚みと熟成感をもたせています。

輝きのある琥珀色。はじめに、パイナップル・プラム・ラズベリーを想わせる香りが広がり、続いて蜂蜜やカスタードクリームのような甘い香りが広がります。口に含むと、ソフトで柔らかな甘みを感じ、ジャパニーズウイスキーならではのマイルドでスムースな味わいが印象的です。余韻には軽い酸味やスパイシーな香りが続きます。最初の一杯は、ストレートでお楽しみいただくのがおすすめです。

Malt whiskies matured 12 years or longer are perfectly matched with mellow grain whiskies of the same age to create this HIBIKI offering. Also included is some whisky from casks formerly used in long-term aging of Japanese plum liqueur, which helps bring out the sweet floral notes on the nose and palate that Suntory whisky is known for. Adding venerable malt aged more than 30 years further brings out the bouquet and adds body to the palate. At a turning point marking the 20th anniversary of HIBIKI, this new offering brings together all of Suntory's whisky making expertise and blending craftsmanship for whisky enthusiasts around the world.

* Tasting Notes : Brilliant amber in color. A fruity bouquet, followed by sweet honey and custard cream. On the palate, a soft and mellow sweetness makes this a whisky one can also enjoy straight. A long finish, with subtle tartness and a spicy bouquet.
Packaging Highlights. The exquisite bottle has 24 facets, representing both the hours in a day and the many seasons according to the lunar calendar. A label reflecting international perspectives was developed, with the name centered on traditional Echizen paper as a proud signature of the brand.

Our first Lg1 for Elements of Islay comes from a distillery on the southern coast with a history of arguing with its neighbours. Oaty initially, with a massive coal and kipper burst on the palate and a big warming finish. We are delighted that Gordon Homer of the famous Spirit of Islay website has endorsed this release with his signature.

Glendronach 1994 / 15 Year old / Sherry Butt

Nose: Intense honeycomb, with some aromas reminiscent of a mature dessert wine. A very syrupy, honeyed affair that develops a residual toastiness and notes of vanilla, cream soda, dough, soda farl (like a flouriness to the barley) and fresh-cut flowers. Becomes very meadowy with time, although the sweetness is also ever-present.
Palate: Fine-grained oak, then the honeyed barley floods in, coming in waves alongside the woodiness. A pronounced tweediness alongside the oak, and late waxiness.
Finish: Some salt and wet leaves alongside honey, beeswax, polished malt and oak.
Balance: The palate isn't as sweet as the nose, with more spicy wood influence. Becomes waxy with water.

Balblair酒廠簡介: (撰文by Richard)

Balblair在蓋爾語的意義為"戰場battlefield"或"平原之都town of the plain"，所產威士忌大部分用來製作blended whisky使用。酒廠於1790由John Ross成立，有人認為早在1949年在Rosses農莊就有人在巴布萊所在地區開始生產威士忌。Balblair位於北高地，四週皆是著名的酒廠，右邊有Glenmorangie，下方有Dalmore，右上方則是Clynelish。Balblair酒廠是蘇格蘭最古老的酒廠之ㄧ，有多古老呢?查了一下其他古老的酒廠，Highland Park創立於1798，Mull島上的Tobermory(Ledaig)創建於1798，Glen Garioch創立於1797，Strathisla創立於1786，而艾雷島最老酒廠Bowmore創建於1779，Glenturret創建於1775，答案揭曉了嗎?

Balblair是高地風景最美的的酒廠之ㄧ，另一間是Speyburn，兩者併列前茅，皆為著名的觀光酒廠!!

Balblair酒廠於1996年被Inver House Distillers酒業收購至今，2000年開始發行 Balblair 33 year old，2003年這款Balblair33年得到IWSC‘Best of the Best’ Mainland Malt大獎，2004年發布Balblair 38 year old，同時全球的銷售也成長了25%，2005年發布 Balblair16年，同年該款威士忌拿下舊金山烈酒大賽和國際葡萄酒和烈酒大賽的雙料金牌。隔年2006年Balblair又再拿下許多獎項。2007年Balblair重新設計瓶身及包裝，並發行了1975、1979、1989、1997。這個包裝的改變讓我聯想起Glenrothes酒廠兩者有異曲同工之妙。2008年又再發行1965年及1987年兩款Vintage。

Balblair 1997 DM:

This full-bodied malt is fused with the citrus aromas of pineapple, apricot and lemon to create a long-lasting sweet finish. On the nose, the American oak barrels, used in the distillate's maturation, produce an inviting, spicy fragrance.

Subtly amber in appearance with rose gold highlights this 1997 vintage has hints of oak, spice and raisin, combined with the sweetness of vanilla to create a long-lingering, creamy smooth finish on the palate.

Appearance: Amber with rose gold highlights.
Aroma: Fused with the aromas of pineapple, apricot and lemon.
Palate: Hints of oak, spice, raisin and sweet vanilla.
Finish: Finish Long-lingering, creamy smooth.

Balblair 1997 (43%, OB, 2007)
Here’s Balblair’s brand new bulky bottle. Traditionalists don’t like it but I do – proof that I’m no old dusty blasé sipper. Yeah! Colour: plain gold. Nose: rather light, fresh, clean, slightly malty and mashy with hints of fresh pears, apples and pineapples and just a little mint. Simple and pleasant – one of the first vodskies? (or whiskas, err…) Mouth: a sweet, rounded and spicy attack, with quite some oak, vanilla, ginger and sultanas. Nice mouth feel, a little oily. Gets then quite peppery and even more gingery. Goes on on apricots and a little aniseed. Finish: medium long, sweet and fruity, with touches of vanilla. Typical crafted American oak maturing. It won’t make you scratch your head but it’s very drinkable and totally flawless. 80 points

Laphroaig Triple Wood 48% 1L

This is akin to a Quarter Cask finished in Oloroso sherry Casks.

This triple cask maturation results in what we think is the perfect marriage of peat, oak and sherry notes, retaining the traditional Laphroaig peat smoke aroma, balanced by the subtle sherry sweetness and hints of sea salt.

Laphroaig?Triple Wood is finally bottled non-chill filtered, at 48% ABV for maximum flavour.
Tasting Note by Whiskyfun Serge:
Laphroaig ‘Triple Wood’ (48%, OB, 1l, 2009)
This one is the well-known (and very good) ‘Quarter Cask’ that’s been finished in sherry casks. In other words, it’s double-finishing. Colour: gold. Nose: it’s interesting that the rather heavy (okay, elaborate) wood treatment (okay, technology) seems to have pushed Laphroaig’s medicinal side even more to the front, whilst the peat smoke got seemingly more subdued, and certainly less ‘big and obvious’ than in other young bottlings. Indeed, this baby smells much older than it probably is (7-9 years?) and we’ve had 20yos that were more pungent and raw, even at similar strength. To sum up, there’s vanilla, camphor, eucalyptus, antiseptics, tincture of iodine, light white pepper, smoked tea, wet hay, a little butter and dairy cream, roots, wet earth and then more vanilla – even if this is anything but a vanilla bomb. In short, very nice. Mouth: thick mouth feel, starts unusually sweet for a Laphroaig and very liquoricy, which may not please all Laphroaig lovers in our opinion. Much more vanilla than on the nose and something that shouts ‘new world chardonnay’ (whatever that means). Buttered toffee, cardamom, orange liqueur (peated Cointreau!) Finish: rather long, a tad closer to an ‘average’ Laphroaig but leaving kind of a greasy sweetness on your palate. Comments: very, very good but very modern and ‘engineered’, especially on the palate that is kind of liqueurish. A Laphroaig liqueur? We like the regular Quarter Cask a little better and our good old 10yo CS much better. SGP:547 - 86 points.
